The Wine

An impressive Red Burgundy from the Premier Cru Ladoix region in the Côte de Beaune, known for its fruitier wines with a strong following in the US. In this particular bottling, the wine's tannins are robust but not overly so - as if it is the love child that inherited the finesse of Cotes de Beaune and the power of Cotes de Nuits. The wine will reward cellaring for 5-10 years.

The wine opens with aromas of surprisingly dark fruit (for a Pinot Noir) and hints of licorice. On the palate, the wine reveals peppery black fruit, well-balanced acidity and a long finish. Though the tannins are evident now, the wine is saved from heaviness by its refreshing acidity, as one expects in a Pinot, and a long, sweet, menthol-tinged finish. 

In the cellar, the wine was aged for 12 months in French oak barrels (15% new), then racked (drained off the lees and grape sediment in the bottom of each barrel) and assembled in stainless steel tanks where the wine aged for 6 months on the fine lees before bottling.

Pairs well with mature cheeses, duck, lamb, roast chicken, tagine...

The Winery

In the very heart of Burgundy, the sixth generation of the Ravauts now runs the family property. Located in the Cote d'Or just outside of Beaune and at the foot of the famed Corton hillside. It is a boutique operation, with total production of ~5,000 cases per year.

Each of these characteristics [soil types] give the vine, and then the wines, an inimitable flavor specific to the land in which they were grown. 

To illustrate this notion of terroir, simply taste two wines from two vineyards located at exactly the same altitude on the hillside, and separated only by a small dirt road: the difference between these two wines will be so marked that it will be able to distinguish a village appellation from a premier cru. This is how the notion of appellation takes on its full meaning in Burgundy and how the role of the land becomes so important.
