I don't know who came up with idea of taking a perfectly good goat cheese from the Loire Valley and rolled it in dried flower petals. But whoever it was, I'd like to thank them, because this is perfectly gooder than the original.
The dried flowers used in making this cheese will vary with the seasons, but the usual suspects include such notables as roses, marigolds, and cornflowers. As with most fresh Loire Valley goat cheeses, this one has hints of grass and citrus.
Wine Pairings
A cheese born to be enjoyed with the crisp white wines of the region, once again proving the old chestnut "What grows together, goes together". Try a nicely chilled Sauvignon Blanc, Chenin Blanc, Rose of Cabernet Franc, or a lightly chilled Loire Valley Gamay.
