The Wine
Given that every great wine begins with great grapes, it's good to know a bit about the roots of the wine. The vines that produced this wine are planted on clay-limestone soils (known for producing aromatic wines of finesse) with Galets (stones) in the village of Les Aspres, sharing the land with olive trees and other cohabitating crops.
The juice for this wine is a blend of Grenache Blanc and Vermentino (60/40). Vinification began with cooling the sediment to about 40 degrees (refrigerator temp), then fermenting in stainless steel tanks at 72°F. It was stirred daily until fermentation was complete. After that, the wine was separated from the gros lees and aged in tank with the fine sediment for added texture and body.
Tasting Notes: An appearance featuring a pale yellow color with green hues leads to aromas featuring honey, flowers and white stone fruits. On the palate the wine is fresh and round with notes of pear and golden delicoius apples. The finish is long and inviting, with and intriguing almond-like bitterness.
Drink now through 2027 with Brie or Comte, Thai food, Northern African dishes (Tagine, anyone?) and a wide variety of rich fish dishes.
