In 1996, Domaine Tardieux=Gal cleared a long-abandoned, southwest-facing parcel overlooking the Cher River. They planted the vines in 2003, which fell under the newly classified 'Touraine AOC'.

This parcel of Sauvignon Blanc makes a fine, mineral-laden white wine. These vines have been certified organic since 1998 - an expensive and time-consuming certification to achieve for any winery, but particularl onerous for a small estate. For an estate willing to go through such effort to achieve certification, it will come as no surprise that their grapes are hand harvested and vinified with native yeasts. Of course, they use no added sugar(does ANYBODY add sugar anymore???) and only a small amount of sulfites used to preserve the wine during transport and storage, and with full transparency, as shown below.

VINIFICATION: Fruit is direct-pressed and spontaneously fermented with native yeasts
ELEVAGE: In stainless steel tanks on fine lees.
SO2 USE: 1 g/hl at pressing, 2 or 3 g/hl post-alcoholic fermentation, 1 or 2 g/hl before bottling. {these are homeopathic quantities! DC)
FINING & FILTERING: Fined with bentonite (white clay) / Tangential filtration
