The Wine

A Multi-Vineyard Pinot blend from the winery's various vineyards. The aromatics are fruit-driven, with Black Cherries leading aromas and flavors of Oregano, blacberry, licorice and sweet spices, with just a hint of warm leather.

The Vineyards are typified by what geologists call 'Laurelwood soils' - silty soils that hosted water creatures a few million years ago, and their decomposed shells contribute a unique element to wines of this region.

350 cases produced. 14% ABV. Drink now through 2028.


The Winery
The winery defines Terroir, that European wine term with an elusive definition, as 'place + time + people' - the unique experience produced by the wine's environment, from farm to table. 'A vineyard's ecology includes more elements than one could possibly describe. They come together in complex ways to create... wines with their own unique personality. Simply put, Terroir is the "flavor" of a Place, at a moment in Time, shaped by the hand of the People.'

Tom Fitzpatrick, owner and winemaker at Elevee, was a Viticulture & Enology Graduate Student at UC Davis back in 2004. While there, he designed a study of Pinot Noir to better understand the influence of Clone and Rootstock on the finished wine's Phenolic Composition (i.e. Color and Texture). The study included Pinot vineyards in some of California’s most diverse environments and the results were a surprise… there was no clear relationship between Clone/Rootstock, and the Phenolic Composition in the finished wine... the “environment” appeared to be the primary driver of differences.

At that moment, Tom understood that a desired wine flavor profile could be best achieved through the careful selection of vineyard environment. Since that time, he's worked towards the concept for Élevée Winegrowers' - a “Study In Terroir”. Enjoy!
