Assyrtiko (also, 'Asyrtiko', but either way say "ah SEAR tee-coe).
A white wine grape indigenous to Greece and most commonly found on the island of Santorini. Also found in the arid volcanic-ash-rich soil of Santorini and other Aegean islands. It produces a very dry wine featuring flavors of citrus (lime) and exotic notes of passion fruit. Due to the sea-side proximity of the vineyards, some pleasant saline notes are evident, making the wine particularly food-friendly!
