Crafted in the style of traditional Italian Amarone, this wine derives its full bodied richness from two unique steps during its winemaking process:
Before pressing and fermentation, the grapes are dried until their water weight is reduced by half, concentrating the flavors in every grape but reducing the amount of juice each grape provides.
The wine is then introduced to the leftover from the winery's Valpolicella wine. These additional skins add more richness and concentration.
This is the Amarone technique. And the Italian-America winemaker behind Mora Estates, Fabiano Ramaci, uses the same approach when crafting his own version in Sonoma, using the same grape varieties this wine requires in his native Italy.
Each bottle is hand-painted by Fabiano. He tells me he gets up before dawn to paint his bottles, turns on some loud music and gets into a zone, painting bottle after bottle and losing complete track of time until he's done.
