Nanou’s lab is based in her home in Oakland, California, an official cottage food operation approved by the Alameda County Department of Environmental Health. All her chocolates are made of unprocessed, plant-based ingredients.

Nanou is a chocoholic with a preference for dark chocolate. She feels it is her professional obligation to have her daily intake of chocolates, assessing their delicate color, their inviting aroma, unique texture and audacious flavors. It's all about quality control, she says. And research.
