The Charles Arnaud Comte' is an iconic French cheese made in the Franche-Comte' region of the Jura mountains. This region is postcard perfect, thanks to the Swiss Alps!
This raw milk cheese is aged for a minimum of one year in 'Fort des Rousses', a repurposed, stone military fort now serving as the aging cave for this cheese.
The cheese has a similar nutty flavor profile to its Swiss relative Gruyere, though this cheese is a bit creamier. Comte has its own protected designation of origin (Appellation d'Origine Controlee) assuring it has been made using milk from herds in a specific region and using traditional methods.
A great addition to a fondue, gratin or on its own with a drizzle of honey, dried fruit and nuts.
