DIRT Wine
The Wine
This high-elevation, mountain grown Pinot Noir is fermented on indigenous yeasts and with 30% whole clusters, utilizing gentle extraction and cool fermentation temperatures. Aged for eighteen months in older French Oak barrels.
Tasting Notes: The wine opens with notes of plum, orange rind, red currant, black tea, and rose petals. Vibrant natural acidity lifts the wine for an airy, ethereal experience.
Pairings: Herb‑roasted poultry, grilled salmon, charcuterie; cheeses like Camembert, Mt Tam, or Alpine tommes.
