The Wine
A supple, fruit‑driven Cabernet Franc grown on the argilo‑calcaire and clay‑limestone soils of the Loire Valley’s famed tuffeau bedrock.
Certified organic, the wine is made with a classic 10-day maceration - long enough to extract soft tannins and fresh aromatics - followed by élevage in tank to preserve purity and lift. Zero additions, zero sulfites.
Tasting impressions: intense ruby color with a subtle, expressive nose of red fruits of framboise, cherry and cassis, followed by floral notes of violet. The wine is fresh, harmonious, and silky, with fine tannins, bright acidity, and a lightly spicy finish. It is a modern, easy‑drinking Saumur‑Champigny meant to be enjoyed young, ideally within four to five years.
Pairings: Roast chicken, pork tenderloin, grilled sausages, and bistro dishes. It works beautifully with lentil salads, mushroom ragouts, and herb‑driven dishes. Cheese-wise, Loire goat cheeses, Tomme‑style cow’s milk cheeses, or mild washed‑rind selections whose savory notes complement the wine’s red‑fruit brightness.
The Winery
Domaine Fouet is a family estate, farming the limestone‑rich slopes that define the appellation’s elegance and freshness. The domaine’s vineyards sit on argilo‑calcaire soils over tuffeau, the porous white limestone that regulates water and imparts finesse and lift to Cabernet Franc. Farming is organic, with careful attention to ripeness and gentle extraction.
Winemaking follows traditional Loire methods: hand‑harvesting at optimal maturity, controlled maceration for delicate tannin extraction, and aging in tank to preserve the grape’s natural vibrancy without oak influence. The estate’s style emphasizes fruit clarity, freshness, and drinkability—wines reflecting both the limestone soils and today's more supple expression of Saumur‑Champigny.
