The Wine
Gavi di Gavi is a dry white wine from the town of Gavi (there are Gavi wines with lesser areas, this is the heart of Gavi production). The wine comes from the Piedmont region, which is best known for its red wines. Along with Erbaluce, Arneis and a handful of other white varieties, Gavi delivers mouth-watering crispness with hints of minerality.
In the glass the wine is pale gold with hints of green. Gavi di Gavi is a pureblood, so to speak, made without blending anything into the Cortese grape that is behind this wine and its dominant flavors of lemon and minerals and a nicely bitter almond note on the finish.
Documents from the 900s indicate Cortese vineyards have existed in Piemonte for ~1,200 years. As with many old-world wines with such deep historical roots, the many generations of former stewards learned that this grape does particularly well in the limestone-and-clay soils of the area around Gavi. Wines from Cortese can be thin, but warmer climates lend greater fruit and bigger body, which is helpful in balancing the grape's natural acidity.
Food Paring - anything seafood! Salads with citrus vinaigrette. Or any dish with a rich sauce you want to cut through with the wines refreshing acidity.
