The Wine
Optimus is a bold but polished blend of Syrah, Cabernet Sauvignon, and Petit Verdot from the hills of Paso Robles’ Willow Creek District. It is one of the few American growing regions that enjoys the winemaking benefits of limestone soils - earning begrudging respect from lovers of French wines.
The 2022 L'Aventure is dense and structured, with blackberry, graphite, and a savory, smoky edge. The region’s calcareous soils give the wine its signature tension and depth.
Pairings: Short ribs, grilled steaks, blue cheese, and richly spiced dishes all match its power, and ripe, fatty soft cheeses provide a nice counterpoint.
The Winery
L’Aventure is Frenchman Stephan Asseo’s visionary Paso Robles estate, known for biodynamic farming and meticulous vineyard work. The winery’s focus on limestone terroir and Rhône‑Bordeaux blending has made it one of the region’s most respected producers.
