The Wine
Sourced from vineyards just outside the core appellations of the eastern Loire, where gravel, sand, and light limestone soils give the wine its name (Caillou = stone or pebble), label image and its bright, mineral profile. One of our consistent best-sellers.
Crisp and aromatic, showing citrus, lime zest, gooseberry, and white flowers, with a subtle herbal hint. Temperature controlled fermentation in stainless steel preserves the fruit's beautiful aromatics, working with the wine’s natural acidity to keep the palate focused and lively. Crisp, stony, and refreshing - a classic Loire Sauvignon Blanc!
Pairings: Shellfish, salads, light fish dishes, and fresh herbs. A welcome aperitif or with a cheese course of young chèvre, are the classic cheese pairing, but others that work well include young Tomme-style, fromage blanc, sheep's cheese from the Pyranees or a triple-cream cheese.
The Winery
Domaine Cottat is one of the historic producers of Loire Valley Sauvignon Blanc. They purchase grapes from selected vineyards whose fruit is compatible with their fresh style, minerality, and desired aromatic profile.
To craft a wine of this style, they must begin with vineyards planted on gravel and limestone soils that encourage early ripening while retaining the wine's signature mouth-watering crispness.
Winemaking is straightforward and protective, relying on gentle pressing and cool stainless‑steel fermentations to preserve the grape’s natural aromatics.
