As with all high-quality olive oils, this product is high in polyphenols. It is one of the healthiest fats to include in your diet.

Making olive oil is a real art. In Morocco, that art is named Atlas Olive Oils. The story begins in 1887 when Boujida Aqallal was producing his famous extra virgin olive oil, an art passed from generation to generation each bringing their own passion and new thought. 

This ultra-premium extra virgin olive oil is from the old orchard surrounding the Family House in the Marrakech estate - a beautiful flat orchard at the foot of the High Atlas, where even Baron de Rothschild used to cultivate his grapes. This oil is preferred by some of the world's best chefs, according to the family's website.

Aroma > Complex green aromas of cut grass, fresh herbs and apples with secondary hints of fresh lemon, tomato and nuts.

Taste > The oil is equally complex in the mouth, with fresh nuts and hedge clippings followed by tobacco leaves, watercress and bitter almond skins. The fresh nuts and herbs join with dried fruits to compliment the oil's bitterness and pepper notes. The lingering after taste features more dried fruits and herbs ending with a touch of malted nuts and milk chocolate.

Style > A medium-to-strong oil which is very well balanced. The bitterness and pepper are not overly aggressive.

Overall Assessment > This is a very good oil on par with premium oils from anywhere in the world. This is an oil suitable for many culinary combinations and for dipping.
