The Wine

90% Arinto, from high-altitude vines planted 30 years ago and now in conversion to Demeter Certified Biodynamic. Manual harvests followed by fermentation using natural yeast in stainless steel vats. Bottled in the "Ancestral" method, meaning the fermentation was not complete by the time of bottling, so s light fizz results in-bottle, and the dead yeast cells remain in the bottle afterwards. As with a hazy beer, the true aficionado lightly swirls/tips/rolls the bottle before opening to evenly disperse the yeast cells, adding flavor and texture to the wine's experience.

In place of SO2, the wines of Mouraz use dried Chestnut Flower or herbal chestnut flower tea as a flavorless, natural alternative to SO2!
