The Wine
A wine crafted entirely from the rare 'Minutolo' grape grown in the limestone-rich soils of Gioia del Colle.
The vines are grown in red, iron-rich soils, yielding a modest 3.3 tons per acre (lower yields produce grapes of better quality). After a gentle pressing, fermentation takes place in stainless steel at controlled temperatures, followed by three months of maturation in steel and two months in bottle.
Tasting notes: The is a pale straw-yellow with glints of green. Aromatically, look for a bouquet of bergamot, tropical and stone fruits like banana, nectarine, yellow peach, green apple, chamomile, and hawthorn, all underpinned by a subtle musky note. On the palate, it is lightly aromatic yet textured, with an intriguing saline streak that pulls it toward savory dishes as dinner companions.
Balanced acidity keeps it lively and versatile, while its moderate alcohol (usually 12 - 12.5%) is in keeping with the wine's elegance. Best served chilled between 45-50 degrees (warmer than your fridge temp of 33-38).
Pairs beautifully with seafood, risotto, shellfish, grilled fish, pasta with herbs, and semi-aged cheeses.
The Winery
Located in Puglia (POOL yah) "the heel of the boot" of Southern Italy, Cantine Polvanera is a new winery by old world standards. It was founded in 2003 by Filippo Cassano, who has dedicated the winery to organic viticulture and the revival of native Apulian varieties.
Based in Gioia del Colle, the estate farms without pesticides or chemical fertilizers, focusing on purity of terroir expression. While renowned for its Primitivo di Gioia del Colle, Polvanera also champions rare local grapes such as Minutolo, Verdeca, and Bianco d’Alessano.
One of the reasons we like to support small producers like this one is they focus on authenticity and freshness, with stainless steel vinification preserving aromatics and terroir character. The Minutolo 2024 reflects this philosophy perfectly: a bright, expressive white wine that captures the essence of Puglia’s Valle d’Itria and offers both tradition and modern finesse
