Cacciocavallo Provolone is treasured semi-hard cheese from Southern Italy. It's name cacciocavallo which means “cheese on horseback,” comes from the traditional aging method of hanging the cheese in pairs over a wooden beam, resembling saddlebags on a horse.
Caciocavallo falls somewhere between Provolone Dolce and Piccante in intensity. It has a buttery and savory flavor with hints of tang and a slightly nutty aftertaste. Depending on how long it’s aged, it can range from semi-soft and meltable to firm and grateable.
