Wensleydale With Cranberry
Wensleydale is one of the oldest English cheeses. According to church documents from the 11th century, the cheese was originally made by monks. But by 1980 the cheese had lost its luster and was on the brink of extinction.
Luckily, Wensleydale enjoyed a much-deserved resurgence in the 1990's when it was highlighted in the British animated films "Wallace & Gromit" (Love this cheesy tidbit!)
The cheese itself is mild with a nice tang of acidity. Bejeweled with cranberries, the visual appeal makes this cheese a favorite on holiday cheese boards. The balance of sweet-tart fruit and creamy/crumbly tangy cheese is a reliable crowd pleaser. Flavor-wise, think of a light cheesecake.
Pairs well with rich sparkling wine or a port. A holiday delight!
