To enjoy Rustic Red at its best, let it warm up to room temperature prior to service. It makes a beautiful addition to your home-made mac & cheese, and its melting ability makes it ever-popular as the cheese of choice for your cheeseburger, baked potato, or roasted vegetables! On a cheeseboard, pair with fresh pears and walnuts, or try it with a good fig jam to offer contrast and depth.
Wine Pairings: Spicy reds like Syrah and Zinfandel, as well as aged classics such as Barbaresco, Barolo, Bordeaux blends, and Rioja.
The Producer
Produced just 15 miles from Cheddar Village (yes, it's a real place) in Somerset, England, Rustic Red is made by the Barber family, who have been crafting cheddar for over 180 years. The cheese’s signature flavor was born from a happy accident when a cheesemaker added Helveticus cultures (typically used in Alpine cheeses) to a traditional cheddar recipe.
This unplanned serendipity created Westminter's Rustic Red and its unique sweet-savory profile. It's the one time we can say "thank God for accidents"!
