The Wine
Cypres de Toi (Your Cypress) is a juicy Mediterranean red that captures the charm of organically farmed Carignan and Grenache from the limestone‑rich hills outside the French towns of Lézignan‑Corbières.
Medium ruby in color, the wine opens with lively aromas of red cherry, raspberry, plum skin and wild strawberry, layered with subtle notes of garrigue - the thyme, bay and rosemary that offer a natural potpourri-like aromatic backdrop to the entire region, 24 hours a day! In addition, the wine delivers hints of ground pepper and warm earth.
The wine is deliciously drinkable, with hints of enticingly tart red fruits like cherry, cranberry and pomegranate. The finish is clean, dry and persistent, showing the balance and clarity that define the winery's style.
Native‑yeast fermentation, gentle extraction and aging in neutral vessels preserve freshness and highlight the fruit’s natural energy. The 2024 vintage, marked by moderate warmth and steady ripening, produced a wine that is both expressive and effortlessly enjoyable, a great example of modern, terroir‑driven Corbières reds!
Pairings: Perfect with roast chicken, grilled sausages, ratatouille, lentil dishes and herb‑accented vegetables. For great cheese pairings try our aged goat cheeses such as Crottin or Chabichou, a semi‑firm sheep’s‑milk cheeses like Ossau‑Iraty or Abbaye de Belloc, and Tomme‑style cow’s‑milk cheeses.
The Winery
Fond Cyprès is a small producer, deeply committed to organics. Run by Laetitia and Rodolphe Gianesini, their vineyards are planted on limestone, clay and gravel soils and farmed to emphasize biodiversity, soil vitality and low yields. The estate’s philosophy centers on authenticity and restraint: harvesting by hand, fermenting with native yeasts, and aging in neutral vessels to preserve clarity and freshness.
The Gianesinis focus on Mediterranean varieties such as Carignan, Grenache and Syrah, crafting wines that express the region’s herbal, stony character. Their work has earned a reputation for producing some of the most charming, pure and thoughtfully made wines in the Languedoc.
“Cyprès de Toi” Rouge is one of their signature bottlings - bright, savory, expressive and shaped by the landscape surrounding their farmhouse and the cypress trees that give the wine its name.
