The Wine

A refined, pale rosé Champagne with delicate red fruit, chalky precision, and a long, graceful finish. The mousse is fine and persistent, carrying subtle spice and citrus. The wine is a favorite among wine industry insiders, where it has earned the nickname "the Booty Call wine".

The Cuvee: The Le Rose is a blend of the three classic grapes of Champagne - Chardonnay, Pinot Noir and Meunier (45% 35%, 20%) - with a small portion of the Pinot being vinified as a still wine and blended into the final cuvee to add the pale color and delicious berry notes..

Billecart‑Salmon is in Mareuil‑sur‑Aÿ, a historic village in the Grande Vallée de la Marne, just east of Épernay. This part of Champagne sits at a stylistic crossroads: it has the chalk‑rich soils and Pinot Noir heritage of the Montagne de Reims, but also the slightly warmer exposures and mixed soils of the Marne Valley. Mareuil‑sur‑Aÿ is classified as Premier Cru whose vineyards are prized for Pinot Noir of finesse rather than sheer power.

The broader Grande Vallée de la Marne is known for wines that combine precision, delicacy, and aromatic lift. Compared to the more muscular Pinot Noir of Ambonnay or Bouzy, Mareuil‑sur‑Aÿ tends to give fruit that is silky, floral, and quietly structured, making it ideal for rosé Champagne where subtlety is essential.

The Winery

Founded in 1818 by Nicolas François Billecart and Elisabeth Salmon, the house remains family‑run after seven generations. Billecart‑Salmon is famous for cold‑fermentation techniques, long aging, and a style that is the very definition of elegance.

Their rosé is a benchmark of this style - precise, subtle, and consistently one of Champagne’s most admired wines.
