The Wine

A red blend that is 30% Monastrell (aka, Mourvedre) and 70% Garnacha Tintorera (aka, Alicante Bouschet) - one of the world's rare, red-skinned grapes that also has red pulp and juice! It may be a grape that is well suited to our ever-warmer summers, as it is drought-resistant and thrives in warm climates. As you can imagine, this is one deeply colored wine.

The wine begins in high-altitude vineyards planted to bush vines growing in sandy soils. The grapes are fermented using ambient yeast and bottled without fining. 

Tasting notes: Blue and black fruit notes dominate, complimented by ample notes of dried meats/jerky, leather and pepper. A very complex wine for not a lot of dough!

Pairings: Savory dishes with depth and complexity - think grilled lamb chops, braised pork shoulder, chicken roasted with garlic and smoked pimentón. Anything off the grill, either meat, mushroom or veg! Cheese-wise, reach for any of our aged cow's milk cheeses such as Comte, aged Mahon, smoked gouda or aged sheep's cheese such as Ossau‑Iraty. Pro-tip: high-acid cheeses should be avoided here, as they amplify the wine's tannins to the point of unpleasantness.
