Regal Wine Co
The Wine
A pure, organically farmed expression from the high plateau of Rueda. In the glass, the wine shows pale straw with green glints, then opens with aromas of lime zest, green apple, white peach and juicy pear, all supported by classic Verdejo notes of fennel, fresh herbs and citrus blossom. A subtle saline/stony edge runs underneath, giving a clear sense of place.
On the palate, the wine is crisp and lively yet serious, with medium body and racy, refreshing acidity. Tangy citrus, crunchy orchard fruit and ripe melon are joined by herbal nuances of fennel fronds, lemon verbena and a hint of anise. The finish is dry, lightly saline and gently bitter in that signature Verdejo way, making it especially food-friendly and very 'more-ish'.
Old-vine parcels on sandy, stony soils, night harvesting and cool stainless-steel fermentation preserve freshness and aromatics, while a short time on fine lees adds polish and a touch of weight without sacrificing clarity. Best enjoyed in its youth for maximum vibrancy, but it has enough concentration to drink well over the next few summers.
Pairings: Ideal with West Coast shellfish (Dungeness crab, spot prawns), simply grilled white fish, ceviche and briny oysters. Also excellent with fresh goat cheese, fennel-accented salads and light seafood pastas where citrus and herbs echo the wine’s bright, savory edge.
The Winery
Bodegas Shaya is part of the Juan Gil Family of Wines, a multi‑generation Spanish wine group known for revitalizing historic vineyard sites across the country. The Shaya project focuses on old‑vine Verdejo grown in the sandy, gravelly soils of Rueda’s high plateau, where altitude, diurnal temperature swings and well‑drained soils produce wines with exceptional aromatic lift and natural acidity.
The vineyards include many parcels of bush‑trained vines, some several decades old, farmed with sustainable and increasingly organic practices. The winery’s approach emphasizes freshness, varietal purity and minimal intervention, relying on night harvesting, temperature‑controlled fermentations and careful handling to preserve the grape’s natural character.
Located near the town of Rueda, the estate contributes to the region’s reputation as Spain’s benchmark for Verdejo, producing wines that balance bright fruit, herbal complexity and a distinctive mineral edge.
