Chambers & Chambers
The Wine
An elegant, lifted, and expressive take on the variety - in keeping with Randall Grahm’s long‑standing preference for freshness, transparency and drinkability over weight or bombast. I had to smile when I saw it for the first time, as Randall's mantra used to be "never Cabernet". People change. But his wine style remains a signature throughout!
The wine opens with a deep ruby color with a bright rim. Aromatically, it offers blackcurrant, red cherry, plum skin and violets, layered with subtle notes of graphite, cedar, dried herb and a faint savory edge that recalls the classic, cooler‑climate style of Cabernet. It's reminiscent of some Bordeaux wines in cooler vintages.
The palate is medium‑bodied, vibrant and beautifully balanced. Dark berry fruit, cassis and red currant a palate shaped by lively acidity and fine 'drink-me-now' tannins. Hints of tobacco leaf, bay leaf, cracked pepper and mineral dust add a surprising and most welcome complexity. The finish is long, clean and quietly persistent.
Fermentation is gentle, emphasizing whole‑berry character and aromatic lift. Aging in mostly neutral barrels preserves purity and avoids overt oak influence. The result is a Cabernet that is expressive yet understated - built for the table, not the trophy shelf—and one that reflects a thoughtful, terroir‑first sensibility rather than maximalist winemaking.
Pairings: Roast lamb, grilled tri‑tip, herb‑marinated chicken, mushroom dishes, aged cheddar, and meals where bright fruit and savory nuance complement rather than dominate.
The Winery
Bonny Doon Vineyard was founded in 1983 by Randall Grahm, one of California’s most influential and iconoclastic winemakers. Originally known for pioneering Rhône varieties in the state (he once graced the cover of Wine Spectator clad in Lone Ranger attire and was dubbed the Rhone Ranger). Randall built a reputation for curiosity, experimentation and a deep commitment to expressing vineyard and varietal with honesty and restraint. Over four decades, Bonny Doon has evolved from a large, eclectic portfolio into a focused, terroir‑driven estate emphasizing purity, balance and sustainable farming.
Grahm’s winemaking philosophy involves minimal intervention, native fermentations, gentle extraction and oak use that supports rather than overshadows fruit. His long‑term interest in clonal diversity, soil health and regenerative viticulture. Many of the vineyards supplying Bonny Doon are farmed organically or biodynamically, reflecting a belief that great wine begins with living soils and thoughtful stewardship.
Based in the Central Coast, Bonny Doon Vineyard remains a benchmark for expressive, food‑friendly wines that privilege nuance over power. Whether working with Rhône grapes or heritage varieties or Cabernet, the estate’s hallmark is clarity - aromatic wines that are balanced and expressive of their origins.
