The Wine
Ratafia is a very interesting fortified wine from an increasing number of Champagne producers. It is made from the Taille (Tail) of the press, the last gallons of juice coming out of the basket. This juice is not allowed for use in the production of Champagne but is ideal for a fortified wine.
Pairings: Serve chilled as an aperitif, or with soft cheese, dried fruit and nuts.
The Producer
Champagne Colin is a family-owned grower estate whose history in Champagne dates back to 1829. The Domaine farms vineyards across the Côte des Blancs, including Premier Cru sites in Vertus, Bergères-les-Vertus, and Cuis, as well as Grand Cru holdings in Cramant and Oiry. The family has built a reputation for Chardonnay-focused Champagnes that emphasize site expression, finesse, and mineral purity.
Today, the estate combines traditional Champagne methods with environmentally conscious vineyard management. Hand harvesting, long lees aging, and careful blending are their halmarks, while the Castille cuvée serves as the signature Blanc de Blancs of the house, showcasing freshness, elegance, and chalk-driven character that have made the Côte des Blancs one of Champagne's most celebrated growing regions.
