Grape Expectations
The Wine
A classic Left Bank Cabernet‑driven profile with cassis, blackberry, graphite, cedar, and tobacco leaf. Medium‑bodied with polished tannins, savory earth, and a long, structured finish. Fermented in stainless steel; aged 12–14 months in French oak barrels (20–25% new). Alcohol: ~13.5%
The estate’s vineyards sit on deep gravel over clay‑limestone, ideal for Cabernet Sauvignon. The 2019 vintage was warm but balanced, producing ripe fruit with excellent tannin maturity. Harvest was done parcel‑by‑parcel, with gentle extraction to preserve finesse. Typical production is 12,000–15,000 cases annually.
Pairings: Roast lamb, steak frites, mushroom dishes; cheeses like aged Comté, Cantal, or English cheddar.
The Winery
An 18th‑century Cru Bourgeois estate, d’Hanteillan follows the challenging HVE‑certified practices (The highest sustainability standard in France). These include reduced herbicide use, planting cover crops to build soil health, and maintaining biodiversity corridors throughout the property. They recycle winery water, compost pomace, and limit chemical inputs. Winemaker Stéphane Toutoundji focuses on restrained oak and wines that feature the terroir‑driven Médoc style.
