The Wine
If you envision the map of Italy as the famous, thigh-high boot, this wine would come from the ball of the foot where the region is called Calabria. The king of red grapes here is Gagliopo, the backbone of the red wine called Ciro Rosso. The vast majority of Gagliopo is made into red wines, so this lighter version is a delightful exception.
Tasting: The wine has an onion‑skin hue and a nose of wild strawberry, pomegranate, rose petal, and a faint saline edge - evidence of the wine region's proximity to the Ionian coast. On the palate, the wine is brisk, carrying red berry fruit, citrus peel, and a subtle dried‑herb note that keeps it firmly in the Mediterranean style. The finish is dry, refreshing, and quietly mineral.
Pairings: A most food-friendly wine across a wide array of dishes. But to really create a synergy between this wine and your food, pair it with grilled shrimp, simple fish dishes, tomato‑based seafood pastas, and lighter antipasti. Its savoriness makes it a great match for summer salads and roasted vegetables. For cheeses, select fresh cheeses like mozzarella, young pecorino, or a fresh goat cheese.
The Winery
Ippolito is the oldest winery in Calabria. Founded in 1845 in Cirò Marina, it is still family‑run.
Over the past century and a half, they’ve become the region’s reference point for Gaglioppo, combining traditional vineyards with increasingly refined winemaking. Their focus has always been on expressing the character of Cirò’s coastal and hillside sites, and their Mabilia brand expresses their desire to show Gaglioppo in a fresher, more contemporary style. It is one of the anchors of modern Calabrian wine.
