The Wine

A typically bright and aromatic wine that showcases the purity of high‑altitude vineyards in Salta, Northwestern Argentina. The wine fills the room with enticing aromas of jasmine, orange blossom, and ripe white peach, followed by citrus notes that keep it fresh rather than perfumed.

On the palate, this is a crisp wine with a mix of peach, mandarin, and a gentle herbal edge that suggests its favorite food pairings. The acidity is refreshing but not sharp, almost ethereal. The finish is clean, floral, and lightly spicy, with that delicious Torrontés snap at the end.

Pairings: Ceviche with lime and Cilantro, Grilled seafood/srhimp scampi, seared Scallops in brown butter and chopped herbs. Ideal for a wide range of Thai or Vietnamese dishes, fresh summer rolls with mint and basil. Bridge flavors include lime, ginger, lemongrass, citrus, fresh herbs and mild chilies. For cheeses, look to fresh goat cheese, Feta in herbed olive oil, ricotta, and other fresh, mild and pungent cheeses.

The Winery

Bodega Colomé is one of Argentina’s oldest wineries, rooted in the Calchaquí Valley of Salta, where vineyards sit among the highest in the world. The estate focuses on organic farming and relies on intense sunlight and cool mountain nights to shape wines with both aromatic lift and natural freshness. Torrontés is a house specialty: sourced from high‑elevation sites that preserve acidity and keep the variety’s floral character precise rather than overwhelming. The style is expressive, mountain‑driven, and unmistakably northern Argentine.
