Corsu Vecchiu ("Old Corsican") is a semi-firm, pasteurized sheep's milk cheese from the Mediterranean island of Corsica.
Aged six to nine months, it has a natural, thin rind and a pale-yellow paste with nutty, salty, and caramel-like flavors. Its aroma is often described as a mix of dried herbs and sweet notes.
