After officially opening the doors of Cypress Grove in 1983, Mary Keehn traveled to the France and rigorously tasted, tested and learned from the masters and makers of cheese throughout the country.

Mary was eager to get back to her kids at home and to her goats.  (Wait, when she says she was eager to get back to her 'kids', was she talking about the goats or her own offspring?! Either way, the story continues...) As she slept on the long transatlantic flight home to Humboldt County, she envisioned a new kind of cheese: one accented with a thick line of ash reminiscent of the fog often blanketing the expansive Humboldt County coastline — and the idea of Humboldt Fog® was born.

And so the legend continues today.  Each handcrafted wheel features a distinctive ribbon of edible vegetable ash.  Flavors of buttermilk & fresh cream, complemented with floral notes, herbaceous overtones, & a clean citrus finish abound.  As Humboldt Fog goat cheese matures, the cream line develops & flavor intensifies. The creamy texture & vegetable ash make this goat cheese unforgettable. Iconic!
