Garber & Co
The Wine
Thia is a straightforward, classically styled Tuscan red built around organically grown Sangiovese grapes.
the wine opens with bright cherry and red‑plum fruit, accented by violets, dried herbs, and an earthy note adding some old-world characteristic to the fruit. The palate is medium‑bodied and brisk, shaped by Chianti’s hallmark acidity and fine, lightly rustic tannins.
Look for a a clean, savory edge here, subtle spice and a touch of leather (a tell-tale sign of many Italian reds), that keeps the wine firmly in the traditional Chianti profile. The finish is fresh and red‑fruited but with enough crispness to pair with a wide range of dishes.
Pairings: Ideal for tomato‑based pastas, roast chicken, grilled sausages, and simple Tuscan dishes (wild boar, but pork makes an excellent substitute if you're fresh out of wild boar). Cheese-wise, reach for aged pecorino, Parmigiano‑Reggiano, and rustic cow’s‑milk cheeses.
The Winery
Fattoria San Michele a Torri is a historic organic estate located in the hills around Florence. They are producers of Chianti, Chianti Classico, and Colli Fiorentini wines.
They farm organically and focus on traditional Tuscan varieties—primarily Sangiovese, with small amounts of other native grapes. Their Chianti bottlings emphasize purity of fruit, bright acidity, and a classic, food‑driven style.
