The Wine
A strikingly pure, mineral‑driven white wine from the limestone‑rich hills of Portugal's Bairrada region. Put this wine up against white Burgundies from top appellations and watch your Francophile wine friends raise an eyebrow as they smile with respect.
In the glass, the wine presents a pale straw color with a slight green tint at the edge.
Aromatically it delivers lemon peel, white peach, quince, green apple and delicate floral notes over a chalky undertone that belies its terroir. Subtle hints of almond skin, fresh hay and wet stone add quiet complexity.
The palate highlights Bical’s natural acidity and the precision that defines Filipa's Nossa project. Citrus, orchard fruit and herbal notes compliment the limestone influence with trailing notes of salinity from its ocean-side influences. The wine offers a long, focused finish with a touch of phenolic grip that adds texture and enhances its gastronomic appeal.
Fermented with native yeasts and aged in large, neutral vessels result in a wine that allows the vineyard’s calcareous soils to take center stage. The 2025 vintage, marked by moderate temperatures and a long ripening season, produced fruit of exceptional balance and aromatics. This is a wine built for both immediate pleasure and graceful evolution over the next five to eight years as its mineral core deepens.
Pairings: Shellfish, grilled sardines, salt‑cod dishes, fresh cheeses, citrus‑accented salads and preparations where bright acidity and chalky tension elevate the meal. Cheese-wise, reach for our fresh or lightly aged cheeses - young goat cheeses such as chèvre or Cabecou. Alpine styles such as young Comté or Gruyère or soft‑ripened cheeses like Brie or Mt Tam work well.
The Winery
Filipa Pato and her husband, sommelier William Wouters, are among the leading voices in the revival of Bairrada, championing indigenous varieties (especially Bical and Baga) and farming that respects the region’s unique limestone and clay soils. Filipa, daughter of renowned winemaker Luís Pato, represents the next generation of a family deeply rooted in the area’s viticultural history.
The Nossa (“our”) project focuses on single‑vineyard expressions that highlight soil, microclimate and traditional farming. Many of the vines are old, low‑yielding and planted on pure limestone. Organic and biodynamic practices guide the work in the vineyards, while the cellar philosophy emphasizes minimal intervention, native fermentations and aging vessels that do not obscure terroir.
Based in Óis do Bairro, the winery has become a benchmark for authentic, site‑specific Bairrada wines. Filipa and William’s commitment to precision, transparency and regional identity has helped redefine the region’s reputation, producing modern wines that are clearly born of the region's traditions. If you haven't had a Pato wine before, you're in for a treat!
