The Cheese

A firm, Alpine cow’s‑milk cheese matured in natural caves, where steady humidity and cool temperatures encourage slow, even ripening. The extended aging deepens both texture and flavor: the paste becomes more dense with occasional crystalline flecks, and the aromas shift toward roasted nuts, browned butter, and a faint earthiness from the cave environment.

Flavors are concentrated and savory, showing hazelnut, caramelized onion, and a gentle, slightly crunchy saltiness balanced by the cheese’s natural sweetness. The rind develops a rustic, copper‑gold patina over time while the interior remains smooth, compact, and beautifully balanced.

Pairings: Charcuterie, roasted vegetables, and hearty breads. For your cheese boards, it works beautifully with apples, pears, toasted nuts, and a touch of honey. Its nutty depth complements white wines with structure, lighter reds, and Alpine varietals. 

The Dairy

Gruyère is produced in the Fribourg region of Switzerland, where traditional Alpine cheesemaking has been practiced for centuries. Wheels destined for cave aging are selected for their structure and balance, then matured in natural stone cellars that maintain ideal conditions without mechanical intervention. Affineurs turn and brush the wheels regularly, allowing the rind to develop slowly and the interior to gain complexity. The result is a cheese that reflects both its mountain origins and the patient craft of cave aging, offering a deeper, more expressive version of classic Gruyère.
