The Wine
A structured, mineral‑driven Beaujolais with the depth and tension that define this famous hill of decomposed schist. The wine shows dark cherry, blackberry, and plum layered with violet, cracked pepper, and a distinct stony edge. The palate is medium‑bodied, firm yet polished, with energetic acidity, fine tannins, and a long, savory finish. It’s a Côte du Py that leans toward precision and minerality rather than overt richness — youthful, vibrant, and built to age.
Pairings: Roast chicken, duck, charcuterie, mushroom dishes, and semi‑firm cheeses. The wine’s structure and dark‑fruit profile make it ideal for earthy, herb‑driven preparations.
The Winery
Guillot‑Gonin is a small, quality‑focused domaine working traditionally in Morgon, emphasizing careful farming and restrained winemaking. Their Côte du Py bottling highlights the cru’s hallmark combination of dark fruit, spice, and schist‑driven minerality, offering a classic, terroir‑true expression of Gamay from one of Beaujolais’ most iconic sites.
