The Wine
A classic, fruit‑forward Champagne crafted from a blend of the region's "Big Three" - Chardonnay, Pinot Noir, and Pinot Meunier.
The wine is fermented in stainless steel to preserve purity, no malo-lactic occurs in the still wine to preserve freshness, and the final cuvee includes up to 70% reserve wines - a big reason behind the wine's complexity. Secondary fermentation occurs in the bottle before aging on the lees for 24 months and the final dosage was 9 g/L - just above the mid-point for a Brut Champagne (0-12 g/L).
The palate is bright and expressive, showing citrus, white peach, red apple, and hints of brioche from its time on the lees. Fine bubbles carry a clean, balanced profile, with a touch of mineral lift and a crisp, refreshing finish that makes the wine both approachable and elegant.
Pairings: Oysters, sashimi, fried foods, and lighter poultry dishes. An excellent aperitif! Cheese-wise, reach for our creamy triple‑crème or a young, tangy goat cheese.
The Winery
Inspiration 1818 is produced under the "Charles Le Bel" label, the second label of Champagne House Billecart-Salmon. It is a separate blend but crafted from the lots not selected for the top label.
The name pays homage to the early nineteenth‑century origins of the estate, reflecting its long history in the region. Grapes are sourced from growers committed to sustainable viticulture, and the winemaking emphasizes freshness, balance, and the classic character of Champagne.
