The Wine
Secondary fermentation and lees aging occurs in bottle, producing bright and crisp with delicate aromatics, showing pale salmon color and fine, persistent bubbles. The nose offers strawberry, raspberry, and citrus peel with a subtle florality. The palate is clean and lively, driven by fresh red‑berry fruit, firm acidity, and a light autolytic note from traditional‑method aging. It finishes dry, refreshing, and quietly elegant.
Pairings: Smoked salmon, sushi, fried chicken, fresh chèvre, and soft triple‑crèmes. Its acidity and bubbles make it especially good with salty or lightly spicy dishes.
The Winery
J. Laurens is a quality‑focused sparkling‑wine estate in Limoux, the historic birthplace of méthode traditionnelle (100+ years before Champagne!).
The domaine works with cool, high‑elevation vineyards that preserve freshness and aromatics, blending Pinot Noir with local varieties to create refined, fruit‑driven rosé. Winemaking emphasizes gentle pressing, long cool fermentations, and extended lees aging, resulting in sparkling wines known for clarity, finesse, and exceptional value.
