The Wine
Atmosphères feels like spring rain on granite - cleansing and quietly, dramatically, romantic. The wine could teach a masterclass in balance and restraint.
It enters with a splash by showing a pale straw gold and a gentle, persistent bead. The mousse is delicate, hinting at finesse rather than flamboyance. Aromas of pears, crushed stone, and lemon pith, intertwined with subtle notes of wild herbs and fresh brioche. There's a clean mineral seam that runs through that triggers memories of wet slate and ocean breeze.
On the palate the wine is bright and incisive, with green apple and quince supported by an enticing chalky texture and saline lift. There's a compelling tension between acidity and creaminess, like biting into a citrus tart with a buttery shell. Mid-palate expands to include yellow plum and almond. The bubbles are fine and energetic, keeping everything taut and brisk.
The journey finishes with echoes of sea spray, fennel seed, and citrus zest. A contemplative close that invites another sip—and possibly a wedge of aged goat cheese drizzled with fine Balsamic vinegar.
