The Wine
Pale and delicate - a southern French rosé that leans into finesse rather than fruit weight.
Subtle aromatics of white peach, salted melon rind, faint strawberry, and a cool mineral note that is almost saline. On the palate it’s crisp with gentle citrus, soft red berries, and a clean, stony finish that reflects the limestone hills of St‑Guilhem‑le‑Désert.
The texture is smooth and dry, carrying just enough fruit to feel inviting while staying firmly in the realm of refreshing, food‑friendly rosé.
Pairings: Mediterranean seafood, grilled prawns, simple roast chicken, or salads built around fennel, citrus, or fresh herbs. Cheese-wise - soft goat cheeses, mild sheep’s milk cheeses, and charcuterie boards!
The Winery
La Domitienne takes its name from the ancient Roman road, the Via Domitia, which once linked Italy and Spain and still runs near their vineyards along the Mediterranean coast.
The estate focuses on traditional southern French varieties. These vines, many decades old, grow in warm, stony soils that naturally limit yields and intensify flavor. The house style is intentionally restrained: cool fermentations to preserve the grape's fresh aromatics, gentle extraction to minimize tannins, and no/minimal oak so the fruit and the region's renowned herbal character can take center stage.
