Sacred Thirst
The Wine
A pure, vibrant Saumur‑Champigny showing bright red cherry, raspberry, and enticing floral note accompanying its signature limestone minerality.
This is a medium‑bodied wine kept fresh by lively acidity, fine tannins, and a clean, precise finish shaped by long maceration in concrete. This aging regimen preserves purity rather than weight. It’s an elegant, transparent expression of Cabernet Franc with the domaine’s hallmark balance and lift.
Pairings: Excellent with roast chicken, charcuterie, grilled vegetables, and Loire goat cheeses. Its freshness and minerality make it especially good with dishes that lean savory and herbal.
The Winery
Domaine Le Petit Saint Vincent is run by fourth‑generation vigneron Dominique Joseph, known as “Pélo,” (hence the label signature). Pelo farms about 32 acres of Cabernet Franc vines in Varrains on clay‑limestone soils over tuffeau.
Farming is organic and focused on soil health, and winemaking is restrained: destemming, long macerations in concrete, and aging mostly in concrete with a touch of old oak. The wines are admired for their clarity, finesse, and honest expression of Saumur‑Champigny’s cool, limestone‑rich terroir.
