Chambers & Chambers
The Wine
Lustau East India Solera is a traditional Cream Sherry produced in Jerez from a blend of Palomino and Pedro Ximénez. The wine is inspired by the historic sherries that traveled aboard merchant ships to the East Indies and returned with greater smoothness and complexity. Lustau ages the Oloroso and Pedro Ximénez components separately for 12 years before blending them and returning the wine to solera for an additional three years of aging. The result is a rich yet balanced fortified wine that combines the nutty, oxidative character of Oloroso with the luscious sweetness of Pedro Ximénez.
The Dark mahogany in color with amber-green highlights. Aromas of maple syrup, brown sugar, raisin, fig, toffee, chocolate, and roasted nuts lead into a silky, full-bodied palate. Flavors of prune, candied orange peel, caramel, and dried fruit are balanced by fresh acidity, creating a wine that is decadent yet remarkably energetic. The finish is long, complex, and lingering, with notes of spice, walnut, and caramelized sugar.
Pairings
An excellent match for blue cheeses, washed-rind cheeses, foie gras, bread pudding, pecan pie, fruit tarts, and other lightly sweet desserts. Its richness also makes it a compelling alternative to Port alongside a cheese course. Serve lightly chilled.
