The Wine

With an average age of about 15 years in an exclusive solera of only 38 casks housed in the historic El Aljibe bodega in Jerez. The term "Pata de Gallina" is traditionally reserved for particularly rich, smooth, glycerol-rich Olorosos that display unusual elegance and texture. These wines have above-average richness and smoothness, characteristics that place them among the most prized expressions of aged Oloroso.

The wine shows a deep gold to dark amber color and enticing aromas of dried fruits, walnut, toasted nuts, pipe tobacco, autumn leaves, and savory oxidative notes. Flavors of walnut, roasted almond, toffee, dried fruit, tobacco, and spice, leading to a remarkably long, complex finish.

Pairings: Rich robust dishes such as duck confit, venison, wild boar, roasted meats, stews, and other game preparations. Aged cheese boards, particularly nutty, long-aged cheeses whose intensity can match the wine's concentration. Beautiful as an after-dinner wine or digestif, allowing its tobacco, walnut, and oxidative complexities to take center stage.

Serve lightly chilled at 55-57°F in a white wine glass.

Farmstead Perspective

This is a dramatic step up in intensity from both Jarana Fino and Los Arcos Amontillado. Where Jarana emphasizes salinity and freshness, and Los Arcos balances freshness with nuttiness, Pata de Gallina is all about depth, oxidation, texture, and concentration. Its complexity makes it one of the most compelling sherries for those who enjoy mature Madeira, old Tawny Port, or well-aged spirits.
