The Wine
A crisp and lively white wine from the (increasingly less!) obscure "other white grape" of Burgundy - Aligoté.
Aromas of bright lemon zest, green apple, and white flowers, touched by a subtle saline edge that reflects Burgundy’s limestone soils.
The palate is taut and refreshing, medium‑light in body, with clean citrus fruit and a faint hint of herbs. The finish is brisk and mineral-driven, making this a straightforward, honest expression of Aligoté—dry, vibrant, and built for easy drinking.
Pairings: Seafood, goat cheeses, vegetable dishes, and anything with a light vinaigrette. It also works beautifully as an aperitif and is a natural match for gougères (like these!) and other classic Burgundian snacks.
The Winery
Albert Bichot is one of Burgundy’s most established family houses, with roots dating back to the early 19th century. Today the Domaine oversees vineyard holdings across the Côte d’Or and beyond, combining Burgundian traditions with "best practices" gleaned from respected producers acrosss our connected world.
