The Wine
Bright, floral, and mineral-driven, with an alluring coral color with light salmon highlights. The nose is clean and expressive with citrus, flowers, and a faint saline edge from its Thau Lagoon terroir. The palate is fresh and balanced, offering red currant and light red‑berry notes with a crisp, persistent finish.
Pairings: Fresh salads, grilled fish or poultry, vegetable tarts, and dishes built around herbs. Fresh cheeses and goat cheese also work well.
The Winery
Moulin de Gassac is part of the Mas de Daumas Gassac family, a pioneering estate in the Hérault that helped redefine what high‑quality Mediterranean wines could be. The Guilhem line is sourced from limestone and clay hillsides near the Gassac valley, where cooling breezes from the Cévennes preserve freshness and aromatics.
Farming is guided by the estate's philosophy of low‑input, sustainable practices, emphasizing biodiversity in the vineyard and careful canopy management. Winemaking is intentionally simple: gentle pressing, cool fermentations, and stainless‑steel aging to keep the rosé bright, floral, and mineral.
