Noord Hollander

In Holland, "Noord" is North and Hollander is Dutchman, or someone from Holland. So, now you know immediately where this cheese is produced. And this region is its own PDO, or "Protected Designation of Origin", the set of E.U. laws governing the production and labeling of agricultural products like wine and cheese. 

The milk from this area is noticeably sweeter and richer than the typical Dutch milk, and that's reflected in the cheese. Aged for four years, the cheese is crumbly (though still a bit creamy for a cheese aged this long) and exhibits the satisfying salt crystals turophiles seek in an aged cheese like this. Delectable flavors of caramel, hazelnuts and a long, satisfying finish.
