Noord Hollander is a premium, aged Gouda produced in North Holland. Cows grazing in these pastures benefit from grasses influenced by the cool maritime climate and lush coastal pastures. The grasses grow on land raised up from low-lying seas and are rich in minerals from the ocean sediment. The result is milk that is unusually rich and high in the fats that make this cheese so satisfying - it is noticeably richer and sweeter than any other Dutch milk. 

The cheese is made from 100% regional cow’s milk, then aged in the Netherlands for four years under controlled humidity to develop its signature crystalline texture and deep caramelized flavor.

Unlike commodity Goudas, Noord Hollander is crafted in smaller batches with a focus on milk purity and long, slow maturation. The result is a cheese that’s denser, sweeter, and more complex than standard aged Gouda. It has a deep flavor with caramel notes and the tiny crunchy salt crystals that makes aged gouda distinctive. Look for a balance of butterscotch richness and a savory depth that makes it a standout on your next cheese board!

Pairings: Tawny ports (10 or 20 year) are the classic pairing here, but don't hesitate to branch out a bit, reaching for the Madeira (Bual or Malmsey), rich Chardonnay, Rioja Reserva or mix it up with an off-dry Pinot Gris.
