The Wine

Australia has discovered the unexpected pleasure of getting two polar opposites to work together. No, we're not talking about politics, we're talking about Shiraz and Pinot Noir. One is big, bold and bombastic, the other is intellectual, delicate and floral. But somehow, they work together really well. And this wine from Nova Vita (new life!) incorporates some whole cluster fermentation to emphasize the high-toned fruit notes, sort of the winemaking equivalent of pushing up the high-end on your sound system EQ.

While many will serve an SPN well-chilled, we prefer the Nova Vita at cellar temperature (~55 degrees, attainable via a brief 30-45 minute visit to your fridge). That is the sweet spot for this wine's freshness, texture, and depth. 

Pairings: A nice spread of spicy grilled or steamed Asian dishes, grilled lamb, duck, spiced pork tenderloin or porchetta. Cheese-wise, reach for semi-firm sheep's milk cheese like young Manchego, Alpine cheeses like Comte, washed rind cheeses like Taleggio or Red Hawk and soft-ripened cheeses like Brillat Savarin or Humboldt Fog.
