Pata de Mulo

Meaning “Mule’s Leg” Pata de Mulo takes its name from the unique, long semi-cylindrical, slightly flattened shape. A traditional cheese from Castilla y León, the cheese is made from the raw milk of Assaf sheep. The young forms are lightly pressed to expel some of the whey The cheese has creamy mouthfeel. The cheeses are transported from the dairy to Cultivo’s aging bodega near Valladolid where they are matured from two to four months, during which time they developed mottled rind and a buttery, nutty flavor.
