The Wine

This is the village wine of Pegaso, sourced from organically grown, 60-year-old Garnacha vines in this mountainous appellation within Castilla y León. The fruit comes from three vineyards growing at over 3000 feet above sea level on a mix of granite and slate soils.

The wine checks all the boxes for "Natural" - organic vineyards, native yeast fermentations, minimal intervention in the cellar, aged six months in large French oak barrels and a further six months in tank before bottling without filtering. The wine expresses the elegance and mineral character that have made Sierra de Gredos one of Spain's most exciting Garnacha regions.

The wine's aromas are immediate and enthusiastic - red cherry, wild raspberry, crushed strawberry and rose petal intertwine with fresh Mediterranean herbs, subtle spice and stony minerality. On the palate, it is medium-bodied and graceful rather than powerful, displaying a purity of fruit that recalls red Burgundy more than traditional warm-climate Garnacha.

Notes of granite dust, dried thyme and a delicate floral lift emerge on the finish. Despite its 15% alcohol, the wine remains remarkably fresh, poised and energetic, with a sense of altitude and place running throughout.

Pairings: Roast lamb with rosemary, duck breast with cherries, grilled pork, mushroom risotto, charcuterie, manchego cheese, or Mediterranean vegetable dishes featuring herbs and olive oil.

The Producer

Pegaso is a project of Sierra de Gredos, the respected Spanish winemaking team associated with Telmo Rodríguez and his partners who recognised the exceptional potential of old-vine Garnacha in the mountains west of Madrid. The estate focuses on preserving historic bush vines planted on poor granite and slate soils at high elevations, where cool nights and long growing seasons produce distinctive wines marked by their perfume, finesse and mineral character rather than sheer power.
