Pet Mout Pet-Nat Chardonnay

Just as with some pricey Champagnes, this wine is a "Blanc de Blanc" in that it is made from 100% Chardonnay. But unlike Champagne, this wine is made in the "Ancestrale" method - fermented in bottle, but using a much less expensive technique. Instead of fermenting in the bottle resting in a cave for years, then removing the yeast through the riddling process, disgorging the sediment, topping off the wine and re-corking just before labeling (whew!), this wine is bottled when it is still only part-way through its first fermentation. 

This leaves the wine with some of the yeast at the bottom of the bottle. True "Pet Nat" lovers know this sediment helps deliver the proper mouthfeel for the wine, and will gently swirl the bottle after opening to distribute the yeast proteins. Think of Pet Nats as the wine version of a hazy IPA.
