North Berkeley Imports
The Wine
A wine from Champagnes Cotes des Blancs, where Chardonnay dominates the plantings and the wines. It also comes from two of Champagne's 17 Grand Cru Villages, resulting in a nicely-priced wine that is a pure expression of Avize and Cramant Chardonnay.
Pale gold in color with a fine and persistent mousse. Aromatics lean toward lemon zest, white flowers, and chalk with a subtle pastry note from extended lees aging (~30 months). The palate is taut and elegant, driven by bright acidity, crystalline fruit, and the deep chalk‑borne minerality that defines Côte des Blancs Grand Cru sites. The finish is long, dry, and precise.
Pairings: Excellent with oysters, scallops, sashimi, triple‑cream cheeses, and delicate dishes where finesse matters. Its structure also works well with richer seafood preparations.
The Winery
Petit & Bajan is a small grower‑producer based in Avize, working exclusively with Grand Cru vineyards in the Côte des Blancs and Montagne de Reims.
The domaine focuses on meticulous farming, hand harvesting, and long aging to highlight purity and terroir. Their style is sleek, mineral-driven, and expressive, with each cuvée designed to showcase the character of chalk‑rich Grand Cru Chardonnay and Pinot Noir.
Ambrosie represents their most elegant Chardonnay‑driven expression of the vineyards' famed chalky soils.
